Title: SHRIMP STUFFED MERLITON

       4    Merlitons
     1/4 c  Butter
       1    Onion, minced
       2    Garlic clove, minced
     1/2 c  Celery, finely chopped
       1 lb Shrimp, peeled
       1 c  Bread, wet and squeezed
            Salt & pepper to taste
            Parsley, minced
            Shallots, minced
            Bread crumbs, Progresso
  
   Cut merlitons in half, remove seeds. Parboil until ALMOST tender.
   Scoop out meat and set aside. Melt butter and saute onions, garlic,
   celery until clear. Add raw shrimp, cut in small pieces, and cook
   until pink. Mash meat of merliton and add to shrimp mixture. Cook
   this for 5 minutes then add bread, seasonings, parsley and shallots.
   Mix well. Put back into merliton shells, top with bread crumbs and
   bake until brown at 350 degrees about 20-30 minutes. These freeze
   well. A Merliton is a vegetable, cross between eggplant & avocado.
   Grows in Southern Louisiana on climbing vines. Subst Eggplant. Recipe
