Vegetable cooking spray
4 ea Cloves garlic, minced
2 c Zucchini, sliced
2 c Yellow squash, sliced
1 c Tomato, chopped
1/2 c Green bell pepper, sliced
1/2 c Vegetable stock
1 tb Chopped fresh basil
1 ts Dried whole basil
Coat a large nonstick skillet with cooking spray; place over
medium-high heat until hot. Add garlic, and cook 1 minute. Add
zucchini and next 4 ingredients. Cook 3 minutes or until vegetables
are crisp-tender, stirring constantly. Stir in basil. Yield: 4
servings.
