Title: SHRIMP FRICASSEE

       Yield: 4 Servings
  
       2 tb Butter
       2 tb Flour
   1 1/2 c  Canned tomatoes
       2 tb Finely chooped tomatoes
       2 tb Chopped green peppers
     1/4 ts Garlic minced
     1/4 ts Salt
     1/4 ts Pepper
     1/8 ts Thyme
     1/2 ts Parsley flakes
       1    Bay leaf
     1/2 ts Celery salt
       1 lb Shrimp cooked, peeled and
            Deveined
       2 c  Cooked rice
  
   1) Preheat oven to 350. F
   
   2) Melt butter in large frying pan. Add flour; cook constantly, until
   lightly browned.
   
   3) Add tomatoes, green pepper, garlic, salt, thyme, parsley, bay leaf,
   celery salt, pepper, and salt; simmer 15 minutes.
   
   4) Add shrimp to frying pan; simmer for 5 minutes.
   
   5) Pack cooked rice into greased custard cups; bake for 5 minutes.
   
   6) To serve, unmold rice unto serving platter. Pour shrimp mixture
   over rice molds.
