QUICK SWEET POTATO PIE

         1 c  cooked mashed sweet
   :          potatoes
         1 ts vanilla extract
       1/2    stick melted diet margarine
       1/2 c  white sugar
       1/2 c  dark brown sugar
       1/4 c  egg substitute
   :       ds salt
   :       ds cinnamon and nutmeg
         1    unbaked pie crust
   
   Preheat oven to 400. Mix together sweet potatoes, extract, margarine,
   white and brown sugars, egg substitute, salt, cinnamon, and nutmeg.
   Blend well. Pour into pie crust and bake 12 minutes at 400. Reduce
   oven temperature to
       350    and bake until done.
