Title: TRADITIONAL ROAST BRISKET

       Yield: 10 Servings
  
       5 lb Brisket
       2    Cloves garlic, halved
       2    Onions, sliced
       1    Bay leaf
            Salt, peppper, paprika
  
   Sprinkle brisket liberally with salt, pepper and paprika on both
   sides. Place meat in roasting pan and spread sliced onions, garlic
   and bay leaf over it. Cover pan and roast at 325 F. for 2 hrs or
   until almost tender. Remove cover and baste with juices in the pan.
   Continue roasting for 1/2 to 3/4 hr. more to brown, basting
   frequently. When tender, remove from oven. Discard bay leaf and
   garlic.  Remove meat from pan. Remove as much fat as possible from
   juices.  Add water to juices if necessary. Blend a little fat with
   flour and add to pan juices. Cook, stirrring constantly until
   thickened.  Mushrooms may be added to gravy.
   
   Serves 10 to 12.
