Title: APPLE PUDDING

       5    Med. size cooking apples
       4    Eggs, separated
     1/2 c  White raisins
            Juice of 1/2 lemon
     1/2 c  Sugar
     1/2 c  Matzo meal
  
   Peel, core and grate apples.  Sprinkle with lemon juice. Beat yolks
   until light.  Gradually beat in sugar, continuing to beat until
   thick. Stir in lemon juice, apples, matzo meal and raisins. Beat egg
   whites in separate bowl until stiff but not dry.  Fold whites into
   batter and pour into 2 1/2 qt. greased casserole. Bake at 350 F. for
   40 min. Serve hot.
