Title: LEMONY APPLE COMPOTE

       Yield: 6 Servings
  
       1 sm Lemon
       6 md Apples, peeled, cored and
            Cut into 1/2 inch dice
   1 1/2 c  Sugar
     1/4 ts Ground mace
  
   Grate colored zest from lemon, avoiding bitter white pith. Set aside.
   Squeeze lemon juice into a medium bowl. Add apples to bowl and toss
   with juice.
   
   In a heavy medium sized saucepan, combien sugar and 3/4 cup water.
   Bring to a boil over medium heat, stirring once or twice. Reduce heat
   to medium-low, add lemon zest, apples, and lemon juice.
   
   Cook, stirring occasionally, 10 minutes.  Add mace and cook 10 to 15
   minutes, or until apples are tanslucent and syrup has nearly boiled
   away. Serve warm.
