Title: PICO DE GALLO (DUPREE)

         3    plum tomatoes -- coarsely
   :          chopped
       1/2    red onion -- finely chopped
         4    green onions -- chopped
         1    shredded carrot -- optional
   :          (opt)
       1/2 c  black olives, chopped --
   :          optional
         2    jalapeno peppers -- seeded
   :          and chopped
         6    garlic cloves -- peeled and
   :          chopped
         1 TB chopped fresh parsley
         2 TB chopped fresh cilantro
       1/4 c  fresh lime juice
       1/4 c  grated lime peel
   :          Salt
   :          Freshly ground black pepper
   
   In a large bowl, mix together the tomatoes, red onion, green onion,
   carrot, olives, jalapeno peppers, garlic, parsley, cilantro, lime
   juice, lime peel, and salt and pepper to taste. Let sit 2 hours
   before serving to allow the flavors to marry. Makes 2 cups
