Title: BEST: SUN-DRIED TOMATO VINAIGRETTE

       Yield: 4 Ounces
  
       2 tb Sun-dried tomatoes,
            -finely chopped
       2 tb Balsamic/red vinegar
       1 ts Dijon mustard
       1    Garlic clove, minced
         pn Salt
         pn Pepper
     1/3 c  Extra-virgin olive oil
  
   In small bowl, whisk together tomatoes, vinegar, mustard, garlic,
   salt and pepper; gradually whisk in oil.
   
   Vinaigrette goes particularly well with leafy spring lettuce.
